The secret to life is that there is no secret.

spelt bread
Spelt loaf baked yesterday.
Why use spelt flour? I like it because it has a nice nutty taste, but there are other reasons too. All about spelt flour

Bread Machine Recipe
1.5tsps fast action yeast
250g organic stoneground spelt flour. (If you can't get any, strong wholemeal flour will do but it lacks the flavour of spelt)
250g strong white flour
1tbs milk powder
2tsp salt
2 tsp sugar (for the bread in the picture, I substituted local honey)
1 oz butter (I usually substitute olive oil)
375ml water

Set the machine to basic large white loaf bake.

Om nom nom!
Is that 2 tablespoons of milk powder?

Yup! It's very very scrummy. Avoid Dove's spelt flour, it's cheaper but isn't nearly as tasty as Bacheldre Mill's organic stoneground variety. You can buy the latter at Waitrose or Harrods.

What make is yours? I love using mine because I can throw all the ingredients in and then go away for 4 or 5 hours and let the machine do gthe rest of the work.

I should have said 'reduce the yeast' if you weren't using the spelt.
